How to roast beans to make gulf arabic coffee?
I've left Qatar almost two years ago, and ... surprise suddenly felt like making gulf arab coffee - the green one with saffron and cardamon. I have found a recipe here http://www.aramcoexpats.com/Internal-Links/ Aramcon-Recipes/Arab-Favorites/1435.aspx and bought green unroasted beans on the municipal market here in Sao Paulo.
My question is - how do I roast these beans? Just to dry them up a little, leaving them green or should they become brownish?
The second question - there are two types of saffron - one comes in threads and is very expencive, the other one - turmeric comes in powder and is very cheap. Which one should I use, and if there is any difference at all, since its only purpose is to add color to the coffee.

Dark Brown? Are you sure? I am not talking about turkish/mediterranean coffee, I am talking about gulf arab coffee, it uses a different kind of roast.
Roast them on a frying pan till it turns dark brown but take care not to burn them
Bleu, thank you for the answer about saffron. My doubt was that in portuguese both are called açafrão saffron is simply açafrão and turmeric is açafrão da terra.
Could you tell me how the coffee beans have to be roasted? I know you buy them already roasted but how do they look like? Still green or brownish?
Tumeric is not saffron , we use the expensive type :) (you won't need lots of it)
