I wonder what response my husband would get if we went up to the butcher and he said "I'd like a young cow please, this old cow (with me)is too tough". LOL

I have, in fact, used marinade (something I like to do anyway) but have to admit I haven't bashed the meat around a bit before cooking it. In UK I have a little wooden mullet with pointy bits one end specifically for beating the meat. Better buy one here!
