Put the chickpeas into a large bowl, cover them with cold water and let soak overnight. The next day, drain the chickpeas and set them aside.

Put the lamb into a large stew pot and cover it with cold water. Bring to a boil and skim off the foam that rises to the top. Add the chickpeas, onion, ground and fresh coriander, caraway seeds and pepper; return to a boil, then reduce the heat. Break the eggs directly into the pot so that they will poach along with the stew. Let the stew cook for an hour to an hour and a half, until the chickpeas are done and the lamb is tender.

Mansaf is an middle eastern food

Mansaf is cooked in jameed (the Arabic word for dried yoghurt), which is then mixed with water in a tray to produce a creamy sauce. This is poured into a large stewing pot with chunks of lamb meat. The pot is put over an open fire. As the stew begins to warm, it is stirred to prevent the yogurt from separating.

Large trays are covered with the doughy flat Arabic bread and dampened with yogurt. On top of this, a layer of rice is heaped. The meat is then piled on top. Almonds, pine-kernels and other nuts may be sprinkled over the dish, which is then ready for serving.

It’s a tradition for Iftar around the world to contain greasy, fried and sugary dishes, as a form of compensation for completing the fasting.

People also tend to eat considerably more than usual in a short span of time. Which has very serious health complications.

An Ideal Iftar should by eating a few dates and water.

Dates “ Tamer or Rutab is the Arabic name” have a revitalizing effect, while water rehydrates and reduces the chances of over-indulgence.

This maybe then followed by a few lighter snacks, light meals, nothing greasy, oily, fired or overcooked.

keep it simple and healthy and enjoy your Ramadan.

How To Cook Tantuni :

Mix together onions, parsley, tomatoes, cumin, chilli flakes and salt.

Use your hands and mix thoroughly. Set aside. Have a glass of lightly salted water nearby when you start cooking.

In a wide, deep frying pan, add enough oil to cover the base in a thin layer.

Heat oil, add meat and saute over medium heat.

After a few minutes, add hot pepper flakes. To ensure meat does not get too dry, keep sprinkling water from glass close by, but be very careful in case the oil splutters.

The moment you have used up all the water, cover the meat with the bread. When the bread has warmed through, remove from heat. Serve lamb with warm bread and onion mix.

Place the puffed disks (“pooris”) on a soft tissue so that excess oil is absorbed.

Now, soak the tamarind in half a cup of warm water for approximately 30 minutes. Drain out the water and mix the pulp to a smooth consistency using a blender.

Transfer the paste into a large bowl and add approx. 1 litre of water, continuously stirring the contents with a spoon. Add a pinch of black pepper and salt. Mix well.

Refrigerate for about 1-1.5 hours to ensure proper blending.

Mix semolina, plain flour, soda water and salt. Knead well to make a soft dough. Cover it with clean wet cloth for about 10 minutes.

Divide the dough into forty marble-sized balls and roll each ball into a disk. Place each disk under a damp cloth soon after rolling.

Heat oil in a container. Deep fry these disks, slightly pressing them with a spoon, until they puff up and are golden brown.

We are getting dragged again from the purpose of Ramadan and speaking of an eating Ramadan month and not as Omais said. As grown ups we happened to know how the prophet & the sahabas fasted and definitely not this way.

We have to spend for the poor if you really have that money with you. After the ramadan you all will be back again as normal out of those holy minds. What we all are supposed to do is control ourselves and our lavish mind to impress our friends with those parties, its not at all the meaning of ramadan.

There is no rule to cook different items everyday. The objective of Ramadhan is to Pray , ask forgiveness and fast and help poors.

In this month, we have to fast and feel about poor people.. it is not advised to cook delicious dishes daily and enjoy every Iftar.

I think the best way to make the most of this month is by maintaining a healthy balance of nutrients.

Rule Number 1-Avoid foods high in saturated fats; grease and sugar.

Rule number 2-Try to eat foods which are in its most natural state, which are either highly processed or not processed at all.

Rule Number 3- don’t bombard your body with so much food after sun set. Cuz the body would put it all in your fat cells.
