baking a cake> question on ingredients

baking my first rasberry cake. used gluten free wheat flour which was the only one found in a hurry.
q. how do you get the cake batter to end up having even edges. the cake base sort of slopes down on the one side and is not so moist. the top is! however, the edges are frayed.
q. just curious as to what bleached flour means?
any other rasberry cake hints on how to get better the next time round?
