Sheer khurma ( Sevai).

I like the indian dish "sheer khurma" made on Eid day and want to cook it this eid inshallah so i need all indian and pakistani QL to help me with some suggestions , yesterday i went to lulu looking for Charoli( Chironji) and didnt find it, do u have any idea where i can find it? plz let me have a good receipe for my dish to b delecious.

Ingredients...

1-Vermicelli 'Siwainyan' crushed 1 Cup

2-Almonds, Pistachios & Coconut crushed(all together)1 cup

3-Dried dates 6/7

4-Cardamom 6/7 seeds

5-Butter/ghee ½ cup

6-Milk 1 liter

7-Condensed milk 1 tin

8-Sugar ½ cup

9-Saffron 2 pinches

lol @ Colt45, Rizks @ FFC they said out of stock but i dnt think so as when i ask them they dnt even know wht is that then one of them asked me to go and check at indian supermarket when i asked there they gave me something different nt the same and the name also nt same, it wasnt dry fruit. and then i asked another person he said its nt available. :( now my sheer khurma will nt b that good.

Cardamom, being a spice, is put to have a certain flavour to your dish. In case you want to do without it, you can.. There's no 'one-single-way' to prepare any particular dish... Experiment, experiment...and experiment! :)

Recipe of Sheer Korma

Ingredients

2 tbspbutter

1/4 cupvermicelli (seviyan)

1/2 cupsugar

3 cupsmilk

1/4 cupchopped dried fruits

2 tbspraisins (kismis)

2 tbspdates (khajur)

1 tsp charoli (piyal seeds)

1/2 tspcardamom (elaichi) powder

2 tbsprose water

A pinch cardamom (elaichi) powder for the garnish

Method1.Heat the butter in a deep pan, add the vermicelli and cook till it turns golden brown.

2.Add the sugar and milk and cook till the sugar dissolves.

3.Add the dry fruits and raisins, mix well and allow it to simmer for 3 to 4 minutes.

4.Add the fresh dates, charoli, cardamom powder and rose water and simmer for another 1 to 2 minutes. If the sheer korma is too thick, add a little hot water and mix gently.

5.Remove from the flame and serve hot or cold garnished with cardamom powder.

Ingredients:

1 package vermicelli

1 gallon whole milk

1 cup Sugar

20 cloves whole cardamom pods

1/2 teaspoon cardamom powder

1 cup slivered almonds, cashews and pistachioes

1/2 cup thick cream

1/2 teaspoon saffron strands

3 tablespoons charoli nuts

1/2 cup light brown raisins

1/2 teaspoon rose water

1 tablespoon butter

Preparation:

Fry the vermicelli in butter until well browned but not burnt.

2. Fry on low heat until all the butter is dried.

3. Add in 1/4 cup sugar and fry again.

4. Add in whole milk cup by cup, stirring constantly, and bring to boil.

5. Add in the raisins, whole cardamom, and 1/2 cup slivered almonds, cashews and pistachioes, and the remaining sugar.

6. Reduce the heat and thicken the Sheer Korma to three-strand consistency, letting the milk boil until it is halved.

7. The vermicelli must be very soft by now.

8. Quickly add in the rose water, charoli and thick cream and let simmer covered for 10 mins.

9. Garnish with the saffron strands and powdered cardamom, and serve immediately.
