wondering what the process is -and how difficult it actually is - to bring in our current babysitter from overseas. she isn't accompanying us to Doha but I'd like to know if it's possible to sponsor her in at some stage. anyone been down this track who could offer some advice?

Not only can she not be Australian, she has to be from one of the nations defined (Phillipines, Indonesia, India, Sri Lanka, Nepal, Ethiopia). You both have to be working, except in extreme circumstances. You have to be earning over a certain limit which I imagine you meet. You will probably have to employer as a Maid, the categories are fairly thin on the ground. I think they need to be over 25 as well.
You will both need your RP's in place, a letter of No Objection from your sponsor, 6 months bank statements, Qatari Labour contract, possibly housing contract.

I am wondering, why this is? Why do we have to sponsor someone from a different country who does things so differently from ourselves. If we had someone from our own country, we would trust them more, be able to communicate with them, they would know our customs. What is it to the government where our maids/servants/nannys come from???

you cannot sponsor her if she is also australian. You only can have a babysitter/maid of different nationality from yours.
