My wife is an instructor here in Doha, we'll soon have our residency. Once I have residency with her as my sponsor, how will seeking employment impact that? Will my visa sponsor change once I find work? What happens if I want to quit that job and look for another?

You have it made here - you can work, change jobs etc etc no problem here as your wife is your sponsor. You don't need to be sponsored by your employer. You will be what is considered local hire, but take care as due to the salary you maybe offered may not be as high. If you wish to quit and look for another job - no problem as your emplyer is not your sponsor.
