Quantities will depend on how many people you are feeding and how hungry they are - difficult to say really!
But for two (husband and myself) you will need:
About 100 grams of Greek Feta cheese (Dodoni is the yummiest! or Almari brand is ok too) either cut into small squares – not too big - or get the crumbed variety!
Not sure about how goats cheese would go in this salad as it has a very different and strong flavour but why not try it?!
However much tuna you feel like adding – maybe a cup?
Prepare the salad dressing by adding to a bowl:
50 mls red grape vinegar
50 mls extra virgin olive oil
Cut a lime in half and using only half, squeeze juice into mixture (leaving out any pips please!)
Add a pinch of salt (not a bucketful as too much is bad for your health!)
Set aside.
Now for the salad:
NOTE: Thoroughly WASH all salad vegetables before peeling or slicing!
A quarter of an iceberg lettuce (ripped not sliced as cutting it makes it go brown quite quickly!) and maybe a couple of handfuls of other types of salad greens (spinach is also a good and very healthy addition!).
2 medium ripe tomatoes sliced into quarters
1 medium red onion peeled and sliced into rings
1 medium cucumber cut into slices (not too thin as the olive oil dressing will make it soft and yukky!) or small chunks
maybe one medium carrot peeled and grated
half a medium bell pepper cut into small chunks
half a cup of olives pitted and sliced in half
dunno how much chilli as I am allergic to it so whatever you think is a fair thing - one? LOL
Add all these veges to a salad bowl!
Now for the best bit!
Pour prepared salad dressing over the salad, scatter tuna chunks and then the Feta cheese. Gently mix all ingredients to combine and serve! Enjoy everyone!!!
