Have you been able to get Facetime to work on a jailbroken IOS 5 phone? I had installed MiddleWhat from Cydia with 4.3.3 and upgraded to IOS 5 thinking that Facetime would finally be re-eanabled for GCC phones. IOS 5 beta added Facetime support but I guess it did not make it to the final product.
