Its mostly to do with the fact that single ppl can dedicate themselves to someone a bit more rather than someone who's in a relationship... As far as the sex,age, colour goes, its right what you say... but then not all ppl share the same beliefs as we do... Some like to be with ppl of their own nationality,while some other than their own...

Its kinda weird, but then, each to his/her own...
