my mom's diabetic too but thank God she's not dependent on insulin.. anyway, she's very cautious about her health.. she does eat anything with some exceptions but with moderation.. her nutritionist told her "you can eat a little bit of everything." just little bit though, control yourself. she eats brown rice, for sugar she uses Splenda (one sachet per cup of coffee).

and bitter gourd helps too. i know there are some herbal medicine that uses it as main ingredient.
