A chipolata is a type of small thin sausage from the United Kingdom. Chipolatas are normally made from coarse-ground pork seasoned with salt and pepper together with such herbs — according to the particular recipe — as sage, thyme, pimento, and/or nutmeg. They are popular as part of a christmas dinner wrapped in streaky bacon.
