Ok, I thought about it, and if there is no ham to make red ey gravy for said grits, I guess it's okay. I swear, if we weren't so adventurous and already cook ethnic things at home, we wouldn't even THINK about this job.

I have to get together a bunch of work related stuff and send it to him so that I can get the process going. We are hoping to go over in Oct to visit (just to be sure) and then move after christmas.
