So far as I know (and my knowledge is 3 years old) Aussie passport holders can get a visa on arrival and the charge is fairly low (as compared with Canadians). Check the Turkey embassy website (I believe there's one in UAE?)
Well Aussie what are you looking for exactly? Historical places? Sandy beaches with blue water? Do you prefer modern hotels or would love to be with nature? PM me and I can suggest you many things. For a start if you want to have a nice holiday, not running after guides like sheep I will recommend you not to go with a tour.
FYI.as an australian;Ordinary and official passport holders are required to have visa to enter Turkey. Ordinary passport holders can obtain three month-multiple entry visas at the Turkish border gates.

Hi Default Nick,
That would be great if you can make some suggestions.
I've never been there and was thinking about a tour, what would you suggest.
How hard is it to get around?
Any suggestions would,
Cheers
