I have recently moved to Doha and had the same issue.
As per the rent a car companies, you can only drive 7 days from landing on your Canadian or any other international licence, in those 7 days, you can go to traffic department and apply for temporary driving licence which is valid for six month, you do need a no object letter from your sponsor if you have entered the country on a work visa.
Once you resident visa is stamped on the passport go back to the traffic department and they will issue you a Qatari driving licence.

As the first poster said, it may vary on who you ask - the most often heard answer is a week to 10 days. You need to get your residency permit before you can get the Qatari license - and that can take up to several weeks depending on your PRO/HR officer at your employer.
The rules about the length one can use thier canadian or international license keep changing.
to be on the safe side you can use your canadian/international license until you get your residency and then it only takes less than an hour to get your qatari license. There will only be an eye test and you need the appropriate documents.
