I have this question that what is the lining of sausages exactly made up of? I heard that it is of small intestine. Pls help....

Raided the cupboard eh.... used to do that as well. But doing it ever so carefully and quietly else suffer a good whack on my behind!

With all those tales our grandmother used to tell about eating raw food we did not dare touch the raw sausages.

It was not until I was initiated into Japanese cuisine that I would love raw food.

I don't eat raw sausages these days - it was just when I was a greedy little kid and raided the cupboard not knowing they were bad for you.

But I still maintain they were tasty! :D

Actually I also like steak tartare (raw beef with capers and herbs served with a raw egg on top to fold into it) but my niece (who is a chef) was with me when I ordered it at a restaurante in France and she said: 'you wouldn't eat that if you saw how it was prepared, I can assure you!'

I mean, as far as I'm concerned the very best beef is used in the preparation, not odds and sods of the offal and other unmentionable parts of the animal.

No idea what she meant, but it kind of put me off it a bit :D

I much prefer them that way and am still tempted to indulge myself.

However, I have read of the disgusting, discarded bits and pieces of a pig or cow which MAY go into the making of SOME sausage these days so I try to curb the urge.

To be honest it's a wonder I'm still alive to tell the tale!

P.S. Raw bacon rinds are good too :D

P.P.S Maybe I should just grab a pig, wrestle it to the ground and gnaw away at it.

Hope I haven't offended anyone.

For me I prefer the traditional way of using the intestinal lining as casings. At least I know they are organic.

Because most sausages are made from internal organs or animal blood... my grandmother always reminded us to cook them well.

So back home we are not used to having boiled sausages on sandwiches or bun... we either have them fried, grilled or barbequed.

casings can also be made from a paper source..its not always intestinal lining. If it bothers you, just peel it away from the sausage itself and throw it out(the lining, not the sausage!)
