Minced meat + Macaroni (attn Qatari ladies)
By consciouseffort •
One of my neighbours (Qatari) sent me a dish of minced meat & macaroni put in layers. There werent too many spices added yet it was very delicious. I have seen a lot of receipes related to this but none of them taste like that. I am sure this is some Qatari style of making this dish. Need ur help in getting this receipe.
Wow, ngourlay, you are a multi-talented guy!

Thankyou dear for the details but would like some qatari lady cook to help us in sorting this as that would be easy to cook :P

There's a cheffy way to prepare individual lasagne, which is nice for a change. You make a ragu fairly dry, and your bechamel in the usual way. Cook small sheets of fresh pasta (egg pasta) in boiling salted water.
Instead of baking it in the oven, layer up the lasagne in a pastry ring. Gratinate the top under a grill.
Anyway, there are a thousand variations on pasta al forno, but only lasagne seems to have made the jump into Qatar's italian restaurants. You should really buy Locatelli's book if you want to know good combinations of pasta and meat sauce.
consciouseffort when u find the recipe m waiting for my dish :)

It's a Qatari specialty, known as basta al forno (pronounced from the Arabic as lass-an-ya).
The origins of this dish are lost in the mists of time, but experts in Qatari heritage have traced it back to the families of pearl fishermen, who mixed camel meat with a dough made of unleavened bread.
The famous Qatari chef, Loc Al-Telli gives a few variations in his encyclopedic tome on local cookery: Made in Qatar.
Sounds yummie already...
