Cooking query

China Syndrome
By China Syndrome

OK, sorry for this trivial post, but cannot find an alternative forum in QL to post this query.

I have a dispute with my wife over the preparation of rice before cooking in a rice cooker.

Here is what each of us reckon:

1) Rice must be washed before cooking to remove the dust i.e. dust causes the brown on the bottom of cooked rice in the rice cooker and is not nescessary anyway.

2) Rice should not be washed as the dust contains the 'goodness'.

I wont say which of us says what so that there is no support re gender i.e. male v female. But if any 'chefs' have an opinion, lets hear it:-)

Have to admit, unless it says on the packet to wash the rice first (which I've never seen) I don't! I'm still alive and kicking, so I guess whatever starch and nutrients or processing there was in what I ate didn't kill me. (Not fond of rice so haven't consumed mountains of the stuff anyway).

If I was buying it from a sack in a souq THEN I would, but not the pre-packed stuff. Although, strangely enough, I always rinse lentils, other pulses etc and burghal (cracked wheat) even though I buy that pre-packed - you can see the water cloud and bits 'n pieces you don't want float to the top, so I rinse until it looks clear.

But what do I know ...

If the rice is from Asia and sub continent, wash at least twice but don't rub it. If rice is from US, no need to wash cause rice are pre boiled from this country. I learnt this from the chef "Yan can Cook" chow chen!

What ever case it maybe.. WASH your rice.. so that you can wash away all the dust..

The browning of the base in a rice cooker.. Refer any manual of a Rice Cooker.. Browing is very common on the base of a rice cooker.. As the base is what get very hot all the away.. so slight browing of the rice in a rice cooker is normal..

Washing rice is goodness.. strange but true..

Hi,

dust contains the 'goodness' is correct but most of us wash the rice before cooking.
