the addition of garlic came about due to the Landlady of a pub I used to frequent. She used to put out 'nibbles' for the Pub Cricket Team after a match and amongst other things she did a cream cheese dip.

It was just, like, Dairylea cheese spread mixed with a good vinegary salad cream (NOT mayonnaise, cos that would be too bland)and add to the garlic chopped fingernail thin.

She served it with raw cauliflower florets.

I must have almost KILLED many, many friends - Death By Garlic - when I served it at parties.

Thus I now add it to cauliflower when simmering it and leave it in when serving it.

re the cayenne pepper - I sometimes add english mustard to bring out the cheese flavour and sharpen the taste.

Jeez - I'm hungry now! I had to put the whole block of cheese in the sauce to prevent me eating it! lol
