chowking is not real chinese food. it's a filipino fast food restaurant with a chinese theme. you can get steamed buns, dumplings and noodles but they are modified to suit filipino palates.
i haven't tried the hotel chinese restaurants but i liked the food in beijing restaurant, including their spinoff branch in city center food court. i loved their beef in plum sauce (?) dish. but the toilet was pretty weird because there's a window ac unit inside. the cold will make you pee more ;)
When my Chinese partners come over to Qatar - they pity the quality of chinese food available out here. I agree with them - so come with low expectations.
Chopsticks (Grand Regency Doha) and i've heard decent reviews about Chopstix (Holiday villa). Tai Chi is also decent

You can go to Chi-Yang in The Pearl Qatar, but expect to pay not less that 350 QAR per person. However, it's worth it big time ;)Food is marvelous...
