"Amy's" is a US brand of canned soups/beans that is available at Megamart. They are often gluten-free.
A good snack for everyone would be a fruit smoothie with soymilk. I use the bagged frozen berries (blueberries or strawberries) and just blend with a box of vanilla soymilk.
Other quick snacks are apples and peanut butter, cornchips and salsa, or corn tortillas with refried beans.
If you look in the ethnic food sections, there are lots of interesting things. Japanese rice crackers are available in many different flavors. "Sunwhite" brand rice will cook up stickier than jasmine rice and is very good rolled in a ball, adding a bit of shoga (pickled ginger) and nori (dried, roasted seaweed).
For quick puddings, like the instant Jell-o variety, chocolate and banana flavor are really good blended with coconut milk available in cans next to the soymilk in Megamart. Other milk subsitutes don't set up as well.

If the product is from the US, it will list CONTAINS MILK in bold letters on the bottom of the ingredients. Some poptarts are milk free (cinnamon, strawberry, and apple flavor). Be cautious with chocolate. Milk is in all Cadbury chocolate. Some dark brands are vegan. Megamart also has Soya margarine and "Smart Balance" butterflavored spread on occasion. My advice is to stock up when they have it! Also be careful when buying bread, as many have milk as an ingredient. I haven't found any dairy-free cheese in doha. Is the allergy just cow's milk? Can goat or sheep cheese be used?
The pharmacy in City Center has chewy bears calcium vitamins if you are looking for supplements. Good luck.
I am suppose to be wheat intolerant but in this country I have given up and am bloated all the time. Mega mart also has wheat free flour to make your own bread, doubles up great for pizza bases, carrefore occasionally stocks wheat free nut bread. Simple treat for you to try is 1 c peanut butter, 1 c sugar, 1 egg. Mix all together, put spoonfuls on a greased tray and bake at 180 for about 20min (golden). They may come out a little soft but will harden. Good luck!
I have started cooking from scratch which is probably healthier but its time consuming with three different diets. In the UK you can buy wheat free, milk free and lactose free products. I did find wheat free flour sporadically from Megamart and Soya milk isn't too hard to find but most of it tastes bad.
I had to try that diet for one of my kids briefly to test for allergies (turns out she was just always sick as her allergy tests came out negative!).... Not too much in Doha, but Mega mart probably has the best selection...

Megamart has wheat free loaves of bread and boxes of pasta (well, the pasta is Kamut, which should be ok).
The bread may be sold out if you visit just after my wife's been there!
