Once again the authentic balsamic vinegar is alcoholic.

Go check this web page: http://www.balsamico.it/ which is from an important group of producers of one of the best balsamic vinegar in Italy and on the English version of it you will read:

“Traditional Balsamic Vinegar of Modena is obtained from crushed grape-must which is cooked, matured through slow acetification, deriving from natural fermentation and progressive concentration and through lengthy aging in a series of small barrels of different kinds of wood, with no addition of aromatic substance”

I’m sure there are different levels and qualities of balsamic vinegar but for me there is just one type of “aceto balsamico”: the one above! … I’m spoiled like that ; )
