Job Description: 

Full responsibility of their respective sushi station with regards to the planning, preparation, set up, and execution of food items.

Maintains standards of quality, service and facilities in all areas over which he/she has responsibility and authority.

RESPONSIBILITIES

• Responsible for the production and have knowledge and competency of Maki Sushi, Nigiri Sushi and Sashimi.
• We expect that every guest in the restaurant receives a good quality product and that the back of Kitchens is kept clean at all times.
• Maintains the good reputation of the restaurant
• To make sure that the restaurant’s guidelines, standards and procedures are followed
• To maintain good communication between restaurant and kitchen
• Be part of a disciplined, well harmonizing team.
• Strict following of closing and opening check lists, cleaning check lists, stock control, procurement, deliveries and storage, food cost management.
• That with ideas and suggestions he/she contributes to a continuous improvement of the entire operation.
• To be familiar with local food hygiene and Qatar's Ministry of Municipality guidelines.
• To implement and enforce all policies, procedures and standards set by the corporate office, including but not limited to kitchen standards.
• Will not engage in any PR and/or media promotions without prior approval from the corporate office. It is vital that all communications to the outside world is streamlined through the owner.
• Performs special duties and projects as assigned by the owners.

Controls costs by:

• Maintaining adequate inventory of food
• Utilising food surpluses
• Portion control
• Wastage monitoring

• Oral communication and in person
